Pancakes are so versatile that it can be served at any time of the day with a variety of toppings. It makes a yummy breakfast with buttery scrambled eggs. Goes well with jam and tea as a teatime snack. To turn them into a dessert treat, simply top the pancakes with honey and fresh fruit with a dollop of ice-cream. Pancakes are so adaptable, that one of our Team Zacopa members actually eats pancakes with curry!

So, without further ado let’s get to the pancake recipe.

Servings: 4-6
Difficulty: Easy
Dry Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon saltWet Ingredients:
2 eggs
2 cups milk
2 tablespoons melted and cooled butter or cooking oil

Other Ingredients:
1 tablespoon sugar, optional
1-2 tablespoons melted butter or oil for cooking

Directions

  1. Mix together dry ingredients in a bowl.
  2. In a separate bowl beat eggs, sugar (optional), milk and melted butter with a whisk.
  3. Gently add the wet mixture to the dry ingredients. Mix well, creating a batter.
  4. Heat skillet over medium flame.
  5. Oil the skillet with some cooking oil or butter.
  6. Ladle batter onto skillet, making a pancake of any size you like.
  7. Cook until bubbles begin to form on the top, then turn to brown the other side.
  8. Serve with any accompaniment of your choice e.g. maple syrup, honey chocolate sauce or even fish or chicken curry!
Tip: Make food fun for the kids. Cook cutesy pancakes for the kids with these adorbs egg moulds.
